Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 12 oz Italian sausage (mild or spicy)

  • 15 oz canned white beans (like cannellini or great northern), drained and rinsed
  • 1 tsp dried oregano
  • 0.25 tsp red pepper flakes (optional)
  • 2 cups fresh spinach
  • 0.5 cup Parmesan cheese, grated

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.
