Ingredients

  • 16 oz penne pasta
  • 2 tbsp olive oil
  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 24 oz marinara sauce
  • 14 oz diced tomatoes (canned, drained)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.25 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup ricotta cheese
  • 0.5 cup parmesan cheese, grated
  • 2 cups mozzarella cheese, shredded
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or olive oil and set aside.

Step 2

Cook the penne pasta in a large pot of boiling, salted water until al dente, about 1-2 minutes less than package instructions. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it up into small crumbles, until browned and cooked through, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pan.

Bake uncovered in preheated oven for 25-30 minutes, until the cheese is melted and bubbling and slightly golden on top.

Remove the dish from the oven and let it rest for 5 minutes. Garnish with the remaining chopped parsley before serving.
