Ingredients

  • 2 cups long grain white rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 teaspoon salt
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 2 stalks scallions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1 whole lime, juiced
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Rinse the white rice under cold water until the water runs clear to remove excess starch. Drain well.

Step 2

In a medium saucepan, combine the coconut milk, water, and salt. Stir to mix. Bring this mixture to a gentle boil over medium heat.

Step 3

Once boiling, add the rinsed and drained rice. Stir gently, reduce the heat to low, cover the saucepan with a tight-fitting lid, and let it cook for 15-18 minutes or until the rice is tender and the liquid is absorbed.

Step 4

While the rice is cooking, heat the vegetable oil in a large skillet over medium heat. Add the garlic and grated ginger and sauté for 1-2 minutes until fragrant.

Step 5

Add the pineapple chunks to the skillet and cook until slightly caramelized, about 3-4 minutes.

Step 6

Once the rice is cooked, fluff it with a fork and gently fold it into the skillet with the pineapple mixture.

Step 7

Add the soy sauce and lime juice to the rice, stirring to evenly distribute the flavors.

Step 8

Sprinkle the chopped scallions and fresh cilantro over the rice and gently mix.

Step 9

Serve warm as a side dish or enjoy it as a light main dish with grilled seafood or chicken.
