Ingredients

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 0.5 lb ground pork
  • 0.5 cup panko breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 2 cloves garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 1 large eggs, lightly beaten
  • 1 tbsp unsalted butter
  • 4 pieces brioche buns
  • 4 pieces lettuce leaves
  • 1 large tomato, sliced
  • 0.5 medium red onion, sliced into rings
  • 4 tbsp mayonnaise
  • 2 tsp mustard
  • 8 pieces pickle slices
  • 4 slices cheddar cheese slices

Directions

Step 1

In a large bowl, mix together the ground beef, ground pork, panko breadcrumbs, Parmesan cheese, minced garlic, Worcestershire sauce, salt, black pepper, smoked paprika, and the lightly beaten egg until just combined. Avoid overmixing to keep the patties tender.

Step 2

Divide the meat mixture into four equal portions and shape them into patties about ¾-inch thick. Press a slight indent into the center of each patty with your thumb to prevent puffing during cooking.

Step 3

Heat a large skillet or grill pan over medium-high heat. Add the butter and let it melt.

Step 4

Cook the patties for 3-4 minutes per side, or until they reach your preferred level of doneness. For medium, aim for an internal temperature of 160°F (71°C). Add a slice of cheddar cheese to each patty during the final minute of cooking and cover the skillet to help the cheese melt.

Step 5

While the patties are cooking, toast the brioche buns in a separate pan or under a broiler for about 1-2 minutes until golden brown.

Step 6

Assemble the burgers: Spread 1 tablespoon of mayonnaise and ½ teaspoon of mustard on the bottom half of each bun. Layer with a lettuce leaf, tomato slice, cooked patty with melted cheese, red onion ring, and two pickle slices. Top with the other half of the bun.

Step 7

Serve immediately with your favorite sides, such as fries or a simple salad, and enjoy your gourmet burger creation!
