Ingredients

  • 6 slices Bacon
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 cup Buttermilk
  • 1 large Egg
  • 4 tablespoons Unsalted butter
  • 1 cup Cheddar cheese, shredded
  • 0.33 cup Green onions, chopped
  • 0.5 teaspoon Freshly ground black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Place a 10-inch cast iron skillet in the oven to heat while you prepare the bread batter.

Step 2

In a large skillet over medium heat, cook the bacon slices until crispy. Set them on a paper towel-lined plate to drain, then crumble or chop into small pieces once cooled. Reserve about 1 tablespoon of the bacon grease.

Step 3

In a large bowl, whisk together the flour, baking powder, salt, sugar, and black pepper.

Step 4

In a separate bowl, whisk together the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.

Step 5

Fold in the shredded cheddar cheese, chopped green onions, and crumbled bacon. Be careful not to overmix.

Step 6

Carefully remove the hot cast iron skillet from the oven and brush or drizzle the reserved bacon grease over the surface of the skillet.

Step 7

Pour the bread batter into the skillet, spreading it out evenly.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 9

Let the bread cool in the skillet for 5-10 minutes before slicing and serving. Enjoy warm or at room temperature!
