Ingredients

  • 4 pieces (each approx. 6 oz) salmon fillets
  • 2 tablespoons unsalted butter
  • 2 medium shallots, finely chopped
  • 2 cups (loosely packed) fresh sorrel leaves, chopped
  • 0.5 cup dry white wine
  • 1 cup heavy cream
  • 2 tablespoons lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 1 tablespoon olive oil

Directions

Step 1

Pat the salmon fillets dry with a paper towel and lightly season both sides with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the salmon fillets skin-side down and sear for 4-5 minutes, or until the skin is crispy and golden brown. Flip the fillets and cook for an additional 2-3 minutes, or until the fish is just cooked through. Remove the salmon from the skillet and set aside.

Step 3

In the same skillet, melt the butter over medium heat. Add the chopped shallots and sauté for 2-3 minutes, or until they are soft and translucent.

Step 4

Stir in the chopped sorrel leaves and cook for 1-2 minutes, allowing them to wilt and turn a bright green color.

Step 5

Pour in the white wine and let it simmer for 2 minutes, reducing slightly.

Step 6

Reduce the heat to low and stir in the heavy cream, lemon juice, salt, and black pepper. Simmer for 5 minutes, stirring occasionally, until the sauce thickens slightly.

Step 7

Return the salmon fillets to the skillet, spooning the sorrel cream sauce over the top. Allow the salmon to warm through for 2-3 minutes.

Step 8

Serve the Irish salmon with sorrel immediately, garnished with additional sorrel leaves if desired. Pair with crusty bread, steamed potatoes, or a fresh green salad for a complete meal.
