Ingredients

  • 1 medium Potato
  • 4 large Eggs
  • 1 cup Sharp cheddar cheese
  • 1 cup Ham
  • 2 stalks Scallions
  • 2 tablespoons Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Parsley

Directions

Step 1

Peel the potato and dice it into small, even cubes. Rinse the diced potato under cold water to remove excess starch and pat them dry with a towel.

Thinly slice the scallions and chop the parsley. Dice the ham into small pieces if it’s not pre-diced.

Step 3

In a medium skillet, heat 1 tablespoon of butter over medium heat. Add the diced potato and cook, stirring occasionally, until golden brown and tender, about 6-8 minutes. Set the cooked potatoes aside.
