Ingredients

  • 4 pieces Large eggs
  • 1 cup Cooked potatoes (peeled and diced)
  • 0.5 cup Leek (white and light green parts, thinly sliced)
  • 0.5 cup Irish cheddar cheese (shredded)
  • 1 tablespoon Butter
  • 2 tablespoons Milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh parsley (chopped, optional for garnish)
  • 1 teaspoon Olive oil

Directions

Step 1

Crack the eggs into a mixing bowl and whisk them together with the milk, salt, and black pepper until well combined. Set aside.

Step 2

Heat a non-stick skillet over medium heat and add the olive oil and butter. Once the butter has melted, add the sliced leeks and cook for 2-3 minutes until softened.

Step 3

Add the diced cooked potatoes to the skillet and stir gently. Cook for another 3-4 minutes until the potatoes are lightly browned and heated through.

Step 4

Pour the egg mixture over the potatoes and leeks in the skillet. Tilt the skillet so the eggs spread evenly across the surface.

Step 5

Sprinkle the shredded Irish cheddar cheese evenly over the omelet. Cover the skillet with a lid and reduce the heat to low. Cook for 4-5 minutes, or until the eggs are set and the cheese has melted.

Step 6

Using a spatula, gently fold the omelet in half. Slide it onto a plate, garnish with chopped parsley if desired, and serve immediately.
