Ingredients

  • 1 cup, finely chopped Corned beef
  • 1 cup, shredded Cooked cabbage
  • 1 cup Mashed potatoes
  • 1 cup Shredded Swiss cheese
  • 12 pieces Egg roll wrappers
  • 0.25 cup Water
  • 2 cups (for frying) Vegetable oil
  • 0.5 cup (for dipping) Thousand Island dressing

Directions

Step 1

In a large bowl, combine the chopped corned beef, shredded cabbage, mashed potatoes, and shredded Swiss cheese. Mix thoroughly to create the filling.

Step 2

Lay out one egg roll wrapper on a clean, dry surface with one corner pointing towards you (like a diamond).

Step 3

Place approximately 2 tablespoons of the filling in the center of the wrapper.

Step 4

Dip your finger in water and moisten the edges of the wrapper to help seal it.

Fold the bottom corner of the wrapper over the filling, then fold in the left and right corners to enclose the filling. Roll tightly towards the top corner to form a sealed egg roll. Repeat with the remaining wrappers and filling.
