Ingredients

  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 4 large Egg yolks
  • 0.5 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 1 tablespoon Instant espresso powder
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Irish whiskey
  • 0 Whipped cream (optional, for garnish)
  • 0 Shaved chocolate (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, and instant espresso powder. Heat over medium heat, stirring occasionally, until the sugar and espresso powder are fully dissolved and the mixture is hot but not boiling.

Step 2

In a separate mixing bowl, whisk together the egg yolks and cornstarch until smooth and pale in color.

Step 3

Slowly pour about 1/4 cup of the hot milk mixture into the egg yolks while whisking constantly to temper the eggs.

Step 4

Gradually add the tempered egg yolk mixture back into the saucepan with the remaining hot milk, whisking constantly to avoid curdling.

Step 5

Continue to cook the pudding mixture over medium heat, whisking frequently, until it thickens and coats the back of a spoon. This should take about 5-7 minutes.

Step 6

Remove the saucepan from the heat and stir in the vanilla extract and Irish whiskey until fully incorporated.

Step 7

Pour the pudding into individual serving glasses or bowls and let it cool to room temperature. Then cover with plastic wrap, pressing it directly against the surface of the pudding to prevent a skin from forming, and refrigerate for at least 2 hours or until fully chilled.

Step 8

Just before serving, top the pudding with whipped cream and shaved chocolate for an extra-luxurious finish, if desired.

Step 9

Serve and enjoy your Irish Coffee Pudding!
