Ingredients

  • 300 g Wholemeal flour (coarse ground)
  • 150 g All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 40 g Unsalted butter (cold)
  • 375 ml Buttermilk
  • 1 tbsp Honey

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or grease a 9x5-inch loaf pan if using one.

Step 2

In a large mixing bowl, combine the wholemeal flour, all-purpose flour, baking soda, and salt. Stir well to ensure the dry ingredients are evenly distributed.

Step 3

Cut the cold unsalted butter into small cubes and add it to the dry ingredients. Using your fingers or a pastry cutter, work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate small bowl, whisk together the buttermilk and honey until the honey is fully dissolved.

Step 5

Pour the buttermilk mixture into the dry ingredients. Stir gently with a wooden spoon or spatula until a sticky dough forms. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface and knead it gently for 1-2 minutes to bring it together into a soft ball.

Step 7

Shape the dough into a round loaf if baking on a baking sheet or press it into the prepared loaf pan.

Step 8

Using a sharp knife, score a deep cross on the top of the bread. This allows the bread to expand while baking.

Step 9

Place the dough in the preheated oven and bake for 35-40 minutes, or until the bread is golden brown and a skewer inserted into the center comes out clean.

Step 10

Remove the bread from the oven and allow it to cool on a wire rack for at least 20 minutes before slicing and serving.
