Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, finely diced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 potato, small, peeled and finely diced
  • 0.5 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon all-purpose flour
  • 0.5 cup unsalted butter, cold and cubed
  • 1.25 cups all-purpose flour (for pastry)
  • 0.5 teaspoon salt (for pastry)
  • 3 tablespoons ice-cold water
  • 1 egg, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

To make the filling, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion, carrot, and celery, and sauté for 5 minutes until softened.

Step 3

Add the minced garlic and cook for 1 minute until fragrant.

Step 4

Stir in the ground beef, breaking it apart with a spoon, and cook until browned, about 6-7 minutes. Drain any excess fat if needed.

Step 5

Add the diced potato, beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir to combine.

Step 6

Bring the mixture to a simmer, then reduce the heat to low. Cook for 10 minutes, stirring occasionally, until the potato is tender and most of the liquid is absorbed. Sprinkle in 1 tablespoon of flour to thicken the mixture if needed, and set aside to cool.

Step 7

To make the pastry, combine 1 1/4 cups of flour and 1/2 teaspoon of salt in a large bowl. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 8

Gradually add the ice-cold water, 1 tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap it in plastic wrap, and chill for 15-20 minutes.

Step 9

On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a 4-5 inch round cutter to cut out circles for the hand pies.

Step 10

Spoon 2-3 tablespoons of the beef filling onto one half of each circle. Fold the dough over the filling to create a half-moon shape, and press the edges to seal tightly. Use a fork to crimp the edges for a decorative finish.

Step 11

Place the hand pies on the prepared baking sheet. Brush the tops with the beaten egg for a golden finish, and use a knife to cut two small slits on top of each pie to allow steam to escape.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown and crisp.

Step 13

Allow the hand pies to cool slightly before serving. Enjoy them warm as a delicious snack or meal!
