Ingredients

  • 12 ounces Rotini or Penne pasta
  • 15 ounces Ricotta cheese
  • 10 ounces Spinach, fresh or frozen (thawed and squeezed dry)
  • 1 large Egg
  • 1 cup Parmesan cheese, grated
  • 2 cups Mozzarella cheese, shredded
  • 2 cloves Garlic, minced
  • 24 ounces Marinara sauce
  • 2 tablespoons Olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add the spinach to the skillet and cook for 2-3 minutes until wilted (if using fresh spinach) or heated through (if using frozen). Remove from heat and let cool slightly.

In a large mixing bowl, combine ricotta cheese, egg, 3/4 cup of Parmesan cheese, 1 cup of mozzarella cheese, cooked spinach, Italian seasoning, salt, and black pepper. Mix until well-incorporated.
