Ingredients

  • 2 cups Fresh corn kernels
  • 2 medium Shallots

  • 1 large Eggs
  • 0.5 tsp Ground turmeric
  • 0.5 tsp Ground coriander
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Vegetable oil (for frying)

Directions

Step 1

In a food processor, pulse half of the corn kernels until coarsely mashed. Transfer them to a mixing bowl and mix with the remaining whole corn kernels for added texture.

Finely chop the shallots, garlic, green onion, and cilantro (if using). Add them to the bowl with the corn.

Add the all-purpose flour, cornstarch, ground turmeric, ground coriander, salt, and black pepper to the corn mixture. Stir until evenly combined.
