Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups unsalted butter, cold and cubed
  • 2 tablespoons granulated sugar
  • 0.25 teaspoons salt
  • 2 tablespoons ice water
  • 1 cups pecan halves
  • 0.75 cups light brown sugar
  • 0.5 cups corn syrup
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 whole large eggs
  • 0.25 teaspoons salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin or line it with parchment cups.

Step 2

In a medium bowl, combine the flour, granulated sugar, and salt. Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.

Step 3

Slowly add the ice water, 1 tablespoon at a time, mixing just until the dough starts to come together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 20 minutes.

Step 4

Roll the dough out on a lightly floured surface to about 1/8 inch thickness. Using a round cutter or the rim of a glass (about 3 inches in diameter), cut out circles of dough and press them gently into the muffin tin cups to form tart shells. Chill the tart shells in the refrigerator while preparing the filling.

Step 5

In a medium bowl, whisk together the brown sugar, corn syrup, melted butter, vanilla extract, eggs, and salt until smooth.

Step 6

Place a few pecan halves into each tart shell, and then carefully pour the filling on top, leaving a small gap at the top to prevent overflow during baking.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the filling is set and the crust is golden brown.

Step 8

Allow the tartlets to cool in the muffin tin for about 10 minutes, then gently remove them and transfer to a wire rack to cool completely.

Step 9

Serve at room temperature or slightly warmed. Optional: Top with whipped cream or a drizzle of caramel sauce.
