Ingredients

  • 125 g Unsalted butter
  • 175 g Caster sugar
  • 2 large Eggs
  • 175 g Self-raising flour
  • 50 g Almond meal (ground almonds)
  • 1 orange Orange zest
  • 60 ml Fresh orange juice
  • 2 tbsp Milk
  • 125 ml Orange juice (for syrup)
  • 100 g Caster sugar (for syrup)

Directions

Step 1

Preheat your oven to 170°C (340°F). Grease a 6-hole muffin tin or line it with paper cases.

In a large mixing bowl, cream the butter and caster sugar together until light and fluffy.

Add the eggs, one at a time, beating well after each addition.

Sift the self-raising flour into the bowl, then fold in gently using a spatula or wooden spoon.

Add the almond meal, orange zest, orange juice, and milk, and mix until just combined.
