Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 2 tablespoons Vegetable oil

  • 10 leaves Curry leaves
  • 2 Green chilies (slit lengthwise)
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (finely minced)
  • 1 teaspoon Ginger (grated)
  • 2 medium Tomatoes (finely chopped)
  • 0.25 teaspoons Turmeric powder
  • 0.5 teaspoons Red chili powder
  • 0.5 teaspoons Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Coriander leaves (chopped)

Directions

Step 1

Rinse the basmati rice thoroughly until the water runs clear. Soak it in water for 20 minutes, then drain.

Step 2

In a medium saucepan, add 2 cups of water and bring it to a boil. Add the soaked and drained rice to the boiling water, reduce the heat to low, cover, and cook until the rice is tender and all the water is absorbed (about 10-12 minutes). Fluff the rice with a fork and set aside.

Heat the vegetable oil in a large pan or skillet over medium heat. Add the mustard seeds and let them pop.

Add the cumin seeds, curry leaves, and green chilies. Stir for a few seconds until aromatic.
