  • 1 medium Carrot
  • 0.5 cup Fresh cilantro
  • 0.25 cup Fresh mint leaves
  • 2 tablespoons Lime juice
  • 0.25 cup Roasted peanuts

  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Chaat masala (optional)
  • 0.5 teaspoon Salt

Directions

Step 1

Wash and prepare all vegetables. Peel the cucumber and carrot if desired, and dice the cucumber and tomato into bite-sized pieces.

Roughly chop the fresh cilantro and mint leaves. Set aside a few leaves for garnish.

Step 4

In a large bowl, combine the cucumber, tomato, red onion, carrot, cilantro, and mint.

Step 5

In a small bowl, whisk together the lime juice, olive oil, ground cumin, chaat masala (if using), salt, and black pepper to create the dressing.

Step 6

Pour the dressing over the prepared vegetables and toss everything together to ensure the salad is evenly coated with the dressing.

Step 7

Roughly crush the roasted peanuts and sprinkle them on top of the salad for crunch.

Step 8

Garnish with reserved cilantro and mint leaves, and serve immediately. Enjoy your Indian Summer Salad!
