Ingredients

  • 4 medium-sized Carrots
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh cilantro leaves
  • 1 small Green chilies
  • 0.5 teaspoons Salt
  • 1.5 teaspoons Oil (preferably vegetable or coconut)
  • 1 teaspoons Mustard seeds
  • 0.5 teaspoons Cumin seeds
  • 1 small Dry red chili
  • 1 pinch Asafoetida (hing)
  • 8 leaves Curry leaves

Directions

Step 1

Wash and peel the carrots. Grate them using a box grater or a food processor. Transfer the grated carrots to a mixing bowl.

Step 2

Finely chop the cilantro leaves and the green chili. Add them to the bowl of grated carrots.

Step 3

In a small pan, heat the oil over medium heat.

Step 4

Once the oil is hot, add the mustard seeds and let them splutter.

Step 5

Add the cumin seeds, dry red chili (broken into pieces), asafoetida, and curry leaves. Sauté for 30 seconds until aromatic.

Step 6

Pour the tempered oil and spices over the grated carrots in the mixing bowl.

Add lemon juice and salt, and toss everything together until well combined.

Step 8
