Ingredients

  • 3 large Eggs
  • 1 cup Fresh spinach
  • 1 cup Cheddar cheese (shredded)
  • 1 small Green chili (finely chopped)
  • 0.25 cup Onion (finely chopped)
  • 0.25 cup Tomato (finely chopped)
  • 2 tablespoons Cilantro (finely chopped)
  • 0.25 teaspoons Turmeric powder
  • 0.5 teaspoons Cumin seeds
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 1 tablespoon Oil or ghee

Directions

Step 1

Wash and finely chop the fresh spinach, green chili, onion, tomato, and cilantro. Set them aside.

Step 2

Crack the eggs into a large bowl. Add turmeric powder, salt, and black pepper. Whisk the eggs together until fully combined and slightly frothy.

Step 3

In a non-stick skillet, heat the oil or ghee on medium heat. Once hot, add the cumin seeds and let them sizzle for 15–20 seconds until aromatic.

Step 4

Add the chopped onion and green chili to the skillet. Sauté for 2–3 minutes until the onion becomes translucent.

Step 5

Stir in the chopped tomato and spinach. Cook for another 2–3 minutes until the spinach wilts and the tomatoes soften.

Step 6

Pour the whisked eggs evenly over the veggies in the skillet. Tilt the pan slightly to distribute the eggs evenly.

Step 7

Sprinkle the shredded cheddar cheese evenly over the omelet. Cover the skillet with a lid and let the omelet cook for 3–4 minutes until the eggs are set and the cheese is melted.

Step 8

Carefully slide the omelet onto a plate and garnish with the chopped cilantro.

Step 9

Serve hot with toast or a side of chutney for an Indian-inspired breakfast or meal!
