Ingredients

  • 3 medium-sized Potatoes
  • 2 small Carrots
  • 0.5 cups Green peas
  • 1 medium-sized Onion
  • 1 small Green chili
  • 1 inch piece Ginger
  • 0.25 cups, chopped Cilantro
  • 1 teaspoons Garam masala
  • 0.5 teaspoons Cumin powder
  • 0.25 teaspoons Turmeric powder
  • 0.5 teaspoons Coriander powder
  • 1 teaspoons or to taste Salt
  • 0.5 cups Bread crumbs
  • 2 tablespoons Cornstarch
  • 0.25 cups for frying Oil

Directions

Step 1

Boil the potatoes in a pot of water until tender, approximately 15 minutes. Peel and mash them in a large mixing bowl.

Step 2

Finely grate the carrots and set them aside. Lightly blanch the green peas by boiling them for 2 minutes and drain.

Step 3

Finely chop the onion, green chili, and ginger. Add these to the mashed potatoes along with the grated carrots, blanched green peas, and chopped cilantro.

Step 4

Add garam masala, cumin powder, turmeric powder, coriander powder, and salt to the vegetable mixture. Combine thoroughly to form a smooth dough-like consistency.

Divide the mixture into equal portions (about the size of a golf ball) and shape each portion into a flat, round patty about 2-3 inches in diameter.

Step 6

Spread the bread crumbs on a plate. In a small bowl, mix cornstarch with 3 tablespoons of water to create a thin slurry.

Dip each patty into the cornstarch slurry and coat it evenly. Then, press the patty into the bread crumbs, coating both sides well. Repeat for all patties.

In a large frying pan, heat the oil over medium heat. Once hot, fry the patties in batches, flipping them carefully after 2-3 minutes, until both sides are golden brown and crispy.

Transfer the cooked patties to a paper towel-lined plate to drain excess oil.

Serve warm with mint chutney, tamarind chutney, or a dollop of yogurt.
