Ingredients

  • 4 medium-sized potatoes
  • 3 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 0.5 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons fresh cilantro
  • 1 tablespoon lemon juice

Directions

Step 1

Peel the potatoes and chop them into 1-inch cubes. Rinse the cubes thoroughly in cold water to remove excess starch, then set aside to drain.

Step 2

Heat the vegetable oil in a large pan or skillet over medium heat.

Step 3

Once the oil is hot, add the cumin seeds and mustard seeds. Allow them to sizzle and pop for about 30 seconds to release their aroma.

Step 4

Reduce the heat to medium-low and stir in the turmeric powder, ground coriander, ground cumin, and red chili powder. Let the spices bloom for about 30 seconds.

Step 5

Add the potato cubes into the pan and stir well, ensuring every piece is coated evenly with the spices.

Step 6

Sprinkle the salt over the potatoes and add 2 tablespoons of water to help the potatoes cook. Cover the pan with a lid and let the potatoes cook for 15 to 20 minutes, stirring occasionally to prevent sticking. Add more water if necessary, ensuring the potatoes don’t dry out or burn.

Step 7

Once the potatoes are tender and cooked through, remove the lid and increase the heat slightly to allow excess moisture to evaporate. Stir gently to prevent breaking the potatoes.

Step 8

Sprinkle the garam masala over the cooked potatoes and mix well. Turn off the heat.

Step 9

Garnish the potatoes with freshly chopped cilantro and a squeeze of lemon juice for added flavor.

Step 10

Serve hot with naan, rice, or as a flavorful side dish.
