Ingredients

  • 1 cup Rice flour
  • 0.5 cup Lentil flour (such as chickpea or red lentil flour)
  • 1.5 cups Water
  • 2 tablespoons Yogurt (optional for tanginess)
  • 0.25 teaspoons Turmeric powder
  • 0.5 teaspoons Cumin seeds
  • 0.5 teaspoons Salt
  • 2 tablespoons Cilantro (chopped)
  • 1 small Green chili (finely chopped, optional for spice)
  • 2 tablespoons Vegetable oil or ghee (for cooking)

Directions

Step 1

In a mixing bowl, combine the rice flour and lentil flour.

Step 2

Gradually whisk in the water and yogurt (if using) to form a smooth, lump-free batter. The consistency should be slightly thinner than pancake batter. Add more water if needed.

Step 3

Stir in the turmeric powder, cumin seeds, salt, chopped cilantro, and green chili (if using). Mix well and let the batter rest for 10 minutes.

Step 4

Heat a non-stick skillet or a cast-iron pan over medium heat. Lightly grease the surface with vegetable oil or ghee.

Step 5

Pour a ladleful of batter onto the center of the skillet and quickly spread it out in a circular motion using the back of the ladle to form a thin crepe.

Step 6

Cook for 1-2 minutes until the edges start to lift and the crepe turns golden brown underneath.

Step 7

Carefully flip the crepe using a spatula and cook the other side for 1 minute. Remove it from the pan and set it aside. Repeat with the remaining batter, greasing the pan as needed.
