Ingredients

  • 4 medium Russet potatoes
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro
  • 1 small Green chili (optional, finely chopped)

Directions

Step 1

Peel the potatoes and cut them into small, bite-sized cubes. Soak them in cold water for 5 minutes to remove excess starch, then drain and pat dry with a clean kitchen towel.

Step 2

Heat the vegetable oil in a large, non-stick skillet or frying pan over medium heat.

Step 3

Add the cumin seeds and mustard seeds to the hot oil. Fry for about 30 seconds or until the seeds begin to splutter and release their aroma.

Stir in the turmeric powder, red chili powder, and ground coriander, and cook for 10 seconds to bloom the spices in the oil.

Add the potato cubes to the skillet and toss well to coat them with the spiced oil.
