Ingredients

  • 8 pieces White or whole wheat bread slices
  • 1 cup Fresh coriander leaves
  • 0.5 cup Fresh mint leaves
  • 1 piece Green chili
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Sugar
  • 4 tablespoons Butter
  • 1 medium Cucumber
  • 1 medium Tomato
  • 1 medium Boiled potato
  • 0.25 teaspoon Black pepper powder

Directions

Step 1

Wash and roughly chop the coriander and mint leaves. Peel and slice the cucumber, tomato, and boiled potato into thin rounds. Set aside.

Step 2

In a blender, combine coriander leaves, mint leaves, green chili, lemon juice, salt, sugar, and about 2 tablespoons of water. Blend into a smooth green chutney. Adjust seasoning as needed.

Step 3

Take the bread slices and evenly spread butter on one side of each slice.

Step 4

On the buttered side of four slices, spread a generous amount of the prepared green chutney.

Step 5

Layer the cucumber, tomato, and boiled potato slices on top of the chutney spread. Sprinkle a pinch of salt and black pepper powder on the vegetables for added flavor.

Step 6

Cover with the remaining buttered slices, buttered side facing down, to form a sandwich.

Step 7

Trim the crusts, if desired, and then cut each sandwich diagonally into two triangles or into rectangles.

Step 8

Serve fresh as is, or grill the sandwiches for an optional crispy texture. Pair with extra chutney or tomato ketchup for dipping.
