Ingredients

  • 2 medium cucumbers
  • 2 medium white onions
  • 2 medium green bell peppers
  • 2 medium ripe tomatoes
  • 2 cups white vinegar
  • 1.5 cups granulated sugar
  • 1 tablespoon mustard seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 2 tablespoons salt
  • 1 cup water
  • 0.5 teaspoon red chili flakes

Directions

Step 1

Wash all the vegetables (cucumbers, onions, bell peppers, and tomatoes) thoroughly under running water.

Step 2

Finely chop the cucumbers, onions, bell peppers, and tomatoes into small, even pieces. For extra smooth relish, you may use a food processor.

Step 3

In a large mixing bowl, combine the chopped vegetables with the salt. Mix well and let sit for 1 hour. This helps draw out excess moisture from the vegetables.

Step 4

After 1 hour, drain the liquid from the vegetables using a fine-mesh strainer. Rinse the vegetables under cold water to remove excess salt and then pat them dry with a clean kitchen towel.

Step 5

In a large saucepan, combine the white vinegar, water, sugar, mustard seeds, turmeric, ground ginger, and red chili flakes. Stir well to dissolve the sugar.

Step 6

Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally.

Step 7

Add the prepared vegetables to the saucepan and lower the heat to a simmer.

Step 8

Simmer the mixture for 30 minutes, stirring occasionally, until the vegetables are tender and the relish has thickened slightly.

Step 9

Remove the saucepan from heat and let the relish cool to room temperature.

Step 10

Transfer the India Relish to sterilized glass jars with airtight lids. Store in the refrigerator for up to 2 weeks, or process the jars in a water bath canner for long-term storage.
