  • 2.5 cups Water
  • 4 tablespoons Seasoned rice vinegar

  • 0.5 teaspoon Salt
  • 10 pieces Inari tofu pouches (Aburaage, pre-seasoned)
  • 1 tablespoon Sesame seeds
  • 0 Optional garnish: pickled ginger
  • 0.25 cup Optional filling: julienned carrots
  • 0.25 cup Optional filling: chopped cucumber

Directions

Step 1

Rinse the sushi rice in cold water several times until the water runs clear. Drain well.

Add the rinsed rice and water to a rice cooker or a medium saucepan. Cook the rice according to the rice cooker's instructions or bring to a boil on the stovetop, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 10 minutes.

While the rice is cooling, prepare the sushi vinegar by combining seasoned rice vinegar, sugar, and salt in a small saucepan. Heat gently over low heat until the sugar dissolves, then set aside to cool.

Transfer the cooked rice to a large bowl and gently fold in the prepared sushi vinegar using a wooden spatula or rice paddle. Be careful not to mash the rice. Let the rice cool to room temperature.

If your inari tofu pouches are not pre-seasoned or canned, you may need to prepare them by simmering in a mixture of soy sauce, sugar, mirin, and dashi. However, most store-bought pouches are pre-seasoned and ready to use.

Open the inari tofu pouches carefully to avoid tearing them.

Optional: Mix sesame seeds or your choice of optional fillings (julienned carrots, chopped cucumber) into the rice for added flavor and texture.

Take a small ball of rice and shape it into an oblong form that matches the size of the inari pouch. Stuff the rice ball carefully into an open tofu pouch, ensuring it fills the pouch but doesn't overstuff it.

Repeat with the remaining rice and tofu pouches.
