Ingredients

  • 4 pieces Chicken thighs (boneless, skinless)
  • 2 tablespoons Cornstarch
  • 2 tablespoons Vegetable oil
  • 4 cloves Garlic (minced)
  • 1 tablespoon Ginger (fresh, minced)
  • 0.25 cup Soy sauce
  • 2 tablespoons Dark soy sauce
  • 3 tablespoons Honey
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 0.5 cup Chicken broth
  • 1 teaspoon Sesame oil
  • 2 stalks Scallions (thinly sliced, for garnish)
  • 2 teaspoons Sesame seeds (lightly toasted, for garnish)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Pat the chicken thighs dry with paper towels. Cut them into bite-sized pieces and season with salt and black pepper.

Step 2

Place the cornstarch in a bowl and toss the chicken pieces in it until they are evenly coated. Shake off any excess cornstarch.

Step 3

Heat the vegetable oil in a large skillet or wok over medium-high heat. Sear the chicken pieces in batches until golden brown on all sides, about 2-3 minutes per side. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add the minced garlic and ginger. Sauté until fragrant, about 30 seconds.

Step 5

Add the soy sauce, dark soy sauce, honey, Shaoxing wine, and chicken broth to the skillet. Stir well to combine and bring the mixture to a simmer.

Step 6

Return the seared chicken to the skillet, making sure each piece is coated in the sauce. Lower the heat to medium-low and let the chicken simmer in the sauce for 10-12 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Step 7

Stir in the sesame oil and adjust seasoning with additional salt and pepper if needed.

Step 8

Transfer the Imperial Chicken to a serving dish. Garnish with scallions and toasted sesame seeds before serving.

Step 9

Serve hot over steamed rice or with stir-fried vegetables for a complete meal.
