  • 4 pieces large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning blend
  • 1 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 0.5 cup sour cream
  • 0.25 cup chopped green onions
  • 0.5 cup salsa

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Scrub the potatoes clean and dry them thoroughly. Pierce each potato a few times with a fork.

Rub each potato with olive oil, sprinkle with kosher salt, and place them on the prepared baking sheet.

Bake the potatoes for 45 minutes to 1 hour, or until the skins are crispy and the potatoes are tender when pierced with a knife. Remove from the oven and let cool slightly.
