Ingredients

  • 227 grams unsalted butter
  • 200 grams granulated sugar
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 320 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoons salt
  • 150 grams powdered sugar (for icing)
  • 2 tablespoons fresh lemon juice (for icing)
  • 1 teaspoon lemon zest (for garnish, optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

In a large mixing bowl, beat the softened butter and granulated sugar together using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Add the lemon zest, vanilla extract, eggs, and lemon juice to the bowl. Beat until well combined.
