Ingredients

  • 1 cup Butter
  • 1 cup Brown sugar
  • 3 cups Cornflakes (or Rice Krispies)
  • 1 cup Chopped pecans (optional)
  • 1.5 quarts Vanilla ice cream (softened)
  • 0.5 cup Caramel sauce (for drizzling)
  • 0.5 cup Chocolate syrup (for drizzling)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Melt the butter in a medium-sized saucepan over medium heat.

Step 3

Stir in the brown sugar and cook until the sugar is dissolved and the mixture becomes glossy, about 2-3 minutes.

Step 4

In a large mixing bowl, combine the cornflakes (or Rice Krispies) and chopped pecans (if using). Pour the butter and sugar mixture over the cereal and pecans, stirring to coat everything evenly.

Step 5

Spread the mixture onto a large baking sheet lined with parchment paper or a silicone mat.

Step 6

Bake for 8-10 minutes, stirring halfway through, until the mixture turns golden brown and crispy.

Step 7

Remove the baking sheet from the oven and let the crunch topping cool completely before breaking it into small clusters.

Step 8

In a 9x13-inch baking dish, spread half of the softened vanilla ice cream evenly across the bottom.

Step 9

Sprinkle half of the cooled crunch topping over the layer of ice cream.

Step 10

Drizzle half of the caramel sauce and half of the chocolate syrup over the crunch layer.

Step 11

Repeat the layers with the remaining ice cream, crunch topping, caramel sauce, and chocolate syrup.

Step 12

Cover the dish with plastic wrap or aluminum foil and place it in the freezer for at least 2 hours or until firm.

Step 13

Once frozen, slice the Ice Cream Crunch into squares and serve immediately. Store any leftovers in the freezer.
