Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 medium shallots, finely chopped
  • 2 cloves garlic cloves, minced
  • 8 ounces button mushrooms, thinly sliced
  • 1 cup white wine
  • 1 cup chicken or vegetable stock
  • 1 tablespoon tomato paste
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons heavy cream (optional)
  • 0.5 teaspoons salt
  • 0.5 teaspoons freshly ground black pepper

Directions

Step 1

In a large skillet or saucepan, heat the butter and olive oil over medium heat until the butter is melted and slightly foamy.

Step 2

Add the finely chopped shallots and sauté for 2-3 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 30 seconds, being careful not to let it burn.

Step 4

Add the sliced mushrooms to the pan and cook for 6-8 minutes, stirring occasionally, until the mushrooms have released their moisture and are golden brown.

Step 5

Pour in the white wine, scraping the bottom of the pan with a wooden spoon to deglaze and release any caramelized bits.

Step 6

Allow the wine to simmer and reduce by half, which should take approximately 5 minutes.

Step 7

Stir in the chicken or vegetable stock and tomato paste. Mix well to fully incorporate the tomato paste into the liquid.

Step 8

Add the fresh thyme leaves, salt, and black pepper, stirring to combine. Simmer the sauce over low heat for 10-12 minutes until slightly thickened.

Step 9

If you prefer a creamier sauce, stir in the heavy cream during the last 2 minutes of cooking.

Step 10

Remove the sauce from heat and sprinkle with fresh parsley before serving.

Step 11

Serve warm over grilled or roasted chicken, pork chops, or even steak for a delicious, savory touch.
