Ingredients

  • 2 large Cucumber
  • 1 tablespoon Salt
  • 3 tablespoons White vinegar
  • 1 cup Water
  • 1.5 tablespoons Sugar
  • 1 clove Garlic
  • 0.5 teaspoon Paprika
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Wash the cucumbers thoroughly and peel them. Use a mandoline or sharp knife to slice the cucumbers very thin (approximately 1/8 inch thick).

Step 2

Place the cucumber slices in a bowl and sprinkle evenly with salt. Gently toss to coat the cucumbers in the salt, then let them sit for 15 minutes. This will help draw out excess water.

Step 3

Meanwhile, make the dressing. In a small bowl, combine the vinegar, water, and sugar. Stir until the sugar dissolves completely. Mince the garlic clove finely and add it to the dressing.

Step 4

Drain the water that has been drawn out of the cucumbers, gently squeezing the slices with your hands to remove as much liquid as possible. Discard the liquid.

Step 5

Pour the dressing over the cucumbers and toss to coat well. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.

Step 6

Before serving, sprinkle the salad with the paprika for a traditional touch. If desired, garnish with finely chopped fresh parsley for added color and flavor.

Step 7

Serve chilled as a side dish or appetizer.
