  • 1 large red bell pepper
  • 1 bay leaf
  • 0.5 cup sour cream (optional, for serving)
  • 2 tablespoons fresh parsley (for garnish)

Directions

Step 1

Cut the beef chuck into bite-sized cubes. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper, tossing to coat evenly.

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides. Remove the beef from the pot and set aside.
