Ingredients

  • 1000 grams beef chuck, cubed
  • 2 medium onions, finely chopped
  • 3 garlic cloves, minced
  • 2 medium red bell peppers, chopped
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 2 tablespoons tomato paste
  • 500 milliliters beef broth
  • 4 medium potatoes, peeled and cubed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the vegetable oil in a large pot over medium-high heat. Add the chopped onions and cook until golden and translucent, about 7 minutes.

Step 2

Add the minced garlic and cook for another minute until fragrant.

Step 3

Stir in the paprika and caraway seeds, and cook for 1-2 minutes, stirring constantly to release their flavors.

Step 4

Add the beef cubes to the pot and brown them on all sides, about 5-7 minutes.

Step 5

Stir in the tomato paste and cook for another minute before adding the chopped red bell peppers.

Step 6

Pour in the beef broth and add the bay leaf. Season with salt and black pepper.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1 hour, stirring occasionally.

Step 8

Add the cubed potatoes and continue to cook for another 45-60 minutes, or until both the beef and potatoes are tender.

Step 9

Taste and adjust seasonings if necessary. Remove the bay leaf before serving.

Step 10

Garnish with chopped fresh parsley and serve hot, ideally with crusty bread or dumplings.
