Ingredients

  • 3 medium Carrots
  • 2 tablespoons Olive oil
  • 1 cup Chickpeas (cooked or canned, drained and rinsed)
  • 2 tablespoons Tahini
  • 2 small Garlic cloves
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 2 tablespoons Water
  • 0.25 teaspoon Optional: crushed red pepper flakes

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Peel and chop the carrots into 1-inch pieces, then toss them with 1 tablespoon of olive oil. Spread the carrots evenly on the baking sheet.

Step 3

Roast the carrots in the oven for 18–20 minutes, or until they are tender and slightly caramelized. Remove from the oven and let them cool for several minutes.

Step 4

In a food processor, combine the roasted carrots, chickpeas, tahini, garlic cloves, lemon juice, remaining 1 tablespoon of olive oil, ground cumin, paprika, salt, and water.

Blend the mixture until it becomes smooth and creamy. If the dip is too thick, add 1–2 more tablespoons of water and blend again until the desired consistency is reached.

Taste the dip and adjust the seasoning if needed. For extra spice, add a pinch of crushed red pepper flakes and blend again.
