Ingredients

  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter (cold, cut into small cubes)
  • 6 tablespoons ice water
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 large onion (diced)
  • 2 medium carrots (peeled and diced)
  • 2 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 1 pound ground beef or ground turkey
  • 2 medium potatoes (peeled and diced)
  • 0.5 cup frozen peas
  • 0.5 cup frozen corn
  • 1.5 cups beef or chicken broth
  • 2 tablespoons all-purpose flour (for thickening)
  • 1 teaspoon fresh thyme (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1 large egg (beaten, for egg wash)
  • 0.5 teaspoon black pepper

Directions

Step 1

To make the crust, combine the all-purpose flour and salt in a large mixing bowl. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.

Step 2

Gradually add the ice water, 1 tablespoon at a time, mixing gently until the dough just comes together. Be careful not to overmix.

Step 3

Divide the dough in half. Shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

Preheat your oven to 375°F (190°C).

Step 5

Heat the olive oil in a large skillet over medium heat. Add the diced onion, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until softened.

Step 6

Add the minced garlic and cook for another 30 seconds until fragrant.

Step 7

Increase the heat to medium-high and add the ground beef or turkey. Cook until the meat is browned and fully cooked, breaking it up with a spoon as it cooks.

Step 8

Stir in the diced potatoes and cook for 3-4 minutes.

Step 9

Sprinkle the 2 tablespoons of flour over the mixture, stirring well to coat. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 10

Gradually pour in the beef or chicken broth while stirring. Bring the mixture to a simmer and cook for 5 minutes until thickened.

Step 11

Add the frozen peas, corn, chopped thyme, parsley, salt, and black pepper. Stir well to combine, then remove the skillet from heat.

Step 12

On a floured surface, roll out one disc of chilled dough into a circle large enough to fit your pie dish. Gently press it into the bottom of the dish.

Step 13

Pour the filling into the crust, spreading it out evenly.

Step 14

Roll out the second disc of dough and place it over the filling. Pinch the edges of the top and bottom crusts together to seal, and trim any excess dough.

Step 15

Cut a few small slits in the top crust to allow steam to escape. Brush the crust with the beaten egg for a golden finish.

Step 16

Bake the pie in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.

Step 17

Let the Humble Pie cool for 10 minutes before slicing and serving.
