Ingredients

  • 4 pieces Large eggs
  • 4 pieces Flour tortillas
  • 1 cup Refried beans
  • 1 cup Shredded cheddar or Monterey Jack cheese
  • 1 cup Salsa
  • 1 piece Avocado
  • 2 tablespoons Fresh cilantro (optional)
  • 2 teaspoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0 to taste Hot sauce (optional)

Directions

Step 1

Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Crack two eggs into the skillet, season with salt and pepper, and cook sunny-side up or to your preferred doneness. Repeat with the remaining eggs, adding the other teaspoon of olive oil for the second batch. Set cooked eggs aside.
