  • 6 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter

  • 2 tablespoons, chopped cilantro

Directions

Step 1

Crack the 6 large eggs into a medium mixing bowl. Add 2 tablespoons of milk, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Whisk until the mixture is well combined and slightly frothy.

Step 2

In a medium skillet over medium heat, melt 1 tablespoon of butter. Once melted, add 0.5 cup of finely chopped onion and sauté for about 2-3 minutes until it becomes translucent.

Add 0.5 cup of diced tomato and 1 small seeded and finely chopped jalapeño pepper to the skillet. Cook for another 2 minutes, stirring occasionally, until the tomato softens.
