Ingredients

  • 200 grams Tomato paste
  • 125 milliliters Malt vinegar
  • 50 grams Date paste
  • 50 grams Molasses
  • 50 grams Dark brown sugar
  • 20 grams Tamarind paste
  • 1 teaspoon Ground allspice
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground cayenne pepper
  • 1 teaspoon Salt
  • 250 milliliters Water
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water

Directions

Step 1

In a medium saucepan, combine the tomato paste, malt vinegar, date paste, molasses, dark brown sugar, tamarind paste, ground allspice, ground cinnamon, ground cayenne pepper, salt, and water.

Step 2

Place the saucepan over medium heat and stir the mixture until all the ingredients are well combined and it begins to simmer.

Step 3

Reduce the heat to low and let the sauce simmer gently for 30 minutes, stirring occasionally, to allow the flavors to meld together.

Step 4

In a small bowl, mix the cornstarch with the cold water to create a slurry.

Step 5

Add the cornstarch slurry to the simmering sauce and stir well. Continue cooking for another 5-10 minutes until the sauce thickens slightly.

Step 6

Remove the sauce from the heat and let it cool for a few minutes.

Step 7

Transfer the sauce to a blender or use an immersion blender to blend it until smooth.

Step 8

Once the sauce reaches your desired consistency, pour it into sterilized jars or bottles while still warm.

Step 9

Seal the containers tightly, allow them to cool to room temperature, and then refrigerate. The sauce can be stored in the refrigerator for up to 4 weeks.
