Ingredients

  • 500 grams Malted brown bread flour (Hovis or equivalent)
  • 325 milliliters Warm water
  • 7 grams Instant dried yeast
  • 10 grams Salt
  • 10 grams Sugar (optional, for a slightly sweeter loaf)
  • 25 grams Unsalted butter (softened)
  • 1 tablespoon Oil (for greasing)
  • 2 tablespoons Milk (for brushing, optional)

Directions

Step 1

In a large mixing bowl, combine the malted brown bread flour, instant dried yeast, salt, and sugar (if using). Ensure the salt and yeast are on opposite sides of the bowl to prevent deactivating the yeast.

Step 2

Add the softened butter to the dry ingredients, rubbing it into the flour mixture until it resembles breadcrumbs.

Step 3

Gradually pour in the warm water while mixing with your hand or a wooden spoon until the dough comes together.

Step 4

Turn the dough out onto a lightly floured surface and knead for about 10 minutes until smooth and elastic. If using a stand mixer, knead with the dough hook attachment for around 6 minutes on medium speed.

Step 5

Lightly oil a clean bowl, place the dough inside, and cover it with a damp tea towel or plastic wrap. Allow the dough to rise in a warm place for 60 minutes or until it has doubled in size.

Step 6

Once risen, punch down the dough to knock out the air, then shape it into a loaf. You can place the dough into a greased 2lb loaf tin or shape it freeform on a baking tray lined with parchment paper.

Step 7

Cover the shaped dough loosely with a tea towel and let it rise again for another 30 minutes until it has doubled in size.

Step 8

Preheat your oven to 220°C (200°C fan) or 425°F. If desired, lightly brush the top of the dough with milk for a shinier crust.

Step 9

Bake the bread in the preheated oven for 25-30 minutes. The bread is done when it sounds hollow when tapped on the bottom.

Step 10

Remove from the oven and allow the bread to cool completely on a wire rack before slicing and serving. Store in an airtight container for up to 3 days.
