Ingredients

  • 1 lb ground beef (80/20 blend)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 4 brioche burger buns
  • 4 slices sliced cheddar cheese
  • 0.25 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 yellow onion (large, thinly sliced)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 4 lettuce leaves
  • 4 tomato slices

Directions

Step 1

In a small bowl, mix together the mayonnaise, ketchup, Dijon mustard, and lemon juice to create the aioli. Cover and refrigerate until ready to use.

Step 2

In a medium skillet, heat 1 tablespoon butter and 1 tablespoon olive oil over medium heat. Add the thinly sliced onions, and cook for 15-20 minutes, stirring occasionally, until caramelized. Remove from heat and set aside.

Step 3

In a large bowl, add the ground beef, salt, black pepper, garlic powder, and smoked paprika. Mix gently with your hands until just combined, being careful not to overwork the meat.

Step 4

Divide the mixture into 4 equal portions and shape into burger patties about ¾ inch thick. Make a small indentation in the center of each patty with your thumb to prevent them from puffing up during cooking.

Step 5

Heat a grill or skillet over medium-high heat. Cook the burger patties for 3-4 minutes on one side, then flip and cook for another 3 minutes. Add a slice of cheddar cheese to each patty during the last minute of cooking, and cover with a lid to melt the cheese.

Step 6

Toast the brioche burger buns on the grill or in a toaster until lightly golden.

Step 7

Assemble the burgers: Spread a generous layer of the aioli on the bottom bun, then layer with lettuce, a cheese-covered patty, caramelized onions, a tomato slice, and finally the top bun.

Step 8

Serve immediately with your favorite side dishes, and enjoy the magical flavors of Houdini Burgers!
