Ingredients

  • 2 cups canned white beans (such as cannellini or great northern beans), drained and rinsed
  • 3 tablespoons extra-virgin olive oil
  • 0.5 medium red onion, finely diced
  • 2 cloves garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach leaves
  • 1 medium lemon, juiced
  • 2 tablespoons fresh parsley, chopped
  • 0.25 teaspoons red pepper flakes (optional)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Heat 2 tablespoons of the olive oil in a large skillet over medium heat.

Step 2

Add the diced red onion and sauté for 2-3 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the cherry tomatoes to the skillet and cook for 4-5 minutes, stirring occasionally, until they start to soften and release their juices.

Step 5

Add the drained and rinsed white beans to the skillet and stir gently to combine. Cook for another 3-4 minutes until the beans are warmed through.

Step 6

Toss in the baby spinach leaves and cook for 1-2 minutes, just until the spinach wilts.

Step 7

Remove the skillet from the heat and drizzle the mixture with the lemon juice and the remaining 1 tablespoon of olive oil.

Step 8

Sprinkle the chopped parsley, red pepper flakes (if using), salt, and black pepper over the salad. Toss gently to combine all the flavors.

Step 9

Serve the hot white bean salad immediately as a side dish or light main course. Enjoy!
