Directions

Step 1

Wash the tomatoes thoroughly. Cut a small 'X' at the bottom of each tomato.

Bring a pot of water to boil. Blanch the tomatoes by placing them in the boiling water for 30-60 seconds until the skins begin to peel back.

Transfer the tomatoes to an ice water bath to stop the cooking process. Peel the skins off, remove the core, and roughly chop the tomatoes.
