Ingredients

  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 0.5 cup Cornmeal
  • 1 large Egg
  • 3 tbsp Milk
  • 1 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 1 tsp Ground cumin
  • 1.5 tsp Chili powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Vegetable oil
  • 1 15-oz can Crushed tomatoes
  • 1 4-oz can Diced green chiles
  • 2 tbsp Tomato paste
  • 0.5 cup Chicken broth
  • 2 tbsp Fresh cilantro

Directions

Step 1

In a large mixing bowl, combine the ground beef, ground pork, cornmeal, egg, milk, garlic powder, onion powder, cumin, chili powder, paprika, salt, and black pepper. Mix gently with your hands until just combined. Do not overmix.

Step 2

Form the mixture into 1-inch meatballs and set aside on a plate or tray.

Step 3

Heat the vegetable oil in a large skillet over medium heat. Once hot, add the meatballs in a single layer, working in batches if necessary. Brown the meatballs on all sides, about 6-8 minutes total. Remove the browned meatballs and set aside.

Step 4

In the same skillet, add the crushed tomatoes, diced green chiles (with their juice), tomato paste, and chicken broth. Stir well, scraping up any browned bits from the bottom of the pan.

Step 5

Bring the sauce to a simmer over medium heat. Add the meatballs back into the skillet, ensuring they are coated in the sauce.

Step 6

Cover the skillet and reduce the heat to low. Simmer for 15-20 minutes, or until the meatballs are cooked through (internal temperature of 160°F/71°C).

Step 7

Garnish with fresh cilantro and serve warm. These meatballs pair perfectly with rice, tortillas, or as an appetizer on their own.
