Ingredients

  • 1 lb Ground pork
  • 1 lb Ground beef
  • 1.5 cups Yellow cornmeal
  • 2 large Eggs
  • 0.5 cup Milk
  • 1 medium Onion, finely grated
  • 2 cloves Garlic, minced
  • 2 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Cayenne pepper
  • 14 oz Crushed tomatoes
  • 2 cups Chicken broth
  • 2 tbsp Olive oil
  • 2 tbsp Fresh cilantro, chopped

Directions

Step 1

In a large mixing bowl, combine ground pork, ground beef, yellow cornmeal, eggs, milk, grated onion, and minced garlic. Mix thoroughly until all ingredients are evenly combined.

Step 2

Add in the chili powder, ground cumin, smoked paprika, salt, black pepper, and cayenne pepper. Mix until the spices are evenly distributed throughout the mixture.

Step 3

Form the mixture into balls approximately 1.5 inches in diameter, and set them aside on a tray. You should have around 18-20 tamale balls.

In a large skillet, heat the olive oil over medium heat. Add the tamale balls in batches, making sure not to overcrowd the pan. Sear the tamale balls on all sides until browned, about 6-8 minutes. Remove from the skillet and set aside.

In the same skillet, add the crushed tomatoes and chicken broth. Stir to combine and scrape up any browned bits from the bottom of the skillet.

Return the tamale balls to the skillet, spooning some of the liquid over the top. Reduce the heat to low, cover the skillet, and let the tamale balls simmer for 20 minutes, stirring occasionally to ensure even cooking.

Once the tamale balls are fully cooked and tender, remove from heat and sprinkle freshly chopped cilantro on top for garnish.
