Ingredients

  • 1 pound fresh green beans
  • 2 tablespoons vegetable oil
  • 3 cloves garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon Szechuan peppercorns
  • 4 pieces dried red chilies (optional, adjust to taste)
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • 2 tablespoons water
  • 1 teaspoon cornstarch
  • 2 tablespoons scallions, thinly sliced (for garnish)
  • 1 tablespoon sesame seeds (optional, for garnish)

Directions

Step 1

Wash and thoroughly dry the green beans. Trim the ends.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the green beans and stir-fry for 5-6 minutes until they are blistered and slightly charred. Remove them from the pan and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add the minced garlic, ginger, Szechuan peppercorns, and dried red chilies. Stir-fry for 30 seconds to release the flavors, being careful not to burn the garlic.

Step 4

In a small bowl, mix together soy sauce, rice vinegar, hoisin sauce, sugar, water, and cornstarch until smooth.

Step 5

Pour the sauce mixture into the skillet and cook for 1-2 minutes, stirring constantly, until the sauce thickens.

Step 6

Add the blistered green beans back to the skillet and toss to coat them evenly in the sauce. Cook for another 1-2 minutes until the green beans are heated through and well-coated.

Step 7

Remove from heat and garnish with thinly sliced scallions and sesame seeds if desired.

Step 8

Serve hot as a side dish or over steamed rice for a complete meal.
