Ingredients

  • 12 pieces Cherry peppers
  • 4 oz Cream cheese
  • 0.5 cup Shredded mozzarella cheese
  • 0.25 cup Grated Parmesan cheese
  • 0.25 cup Italian breadcrumbs
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Olive oil
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the cherry peppers and carefully cut off the tops. Remove the seeds and membranes using a small spoon or knife to create hollow cavities in each pepper.

Step 3

In a medium mixing bowl, combine cream cheese, shredded mozzarella cheese, grated Parmesan cheese, Italian breadcrumbs, minced garlic, chopped parsley, salt, and black pepper. Mix thoroughly until smooth.

Step 4

Using a small spoon or piping bag, stuff each cherry pepper with the cheese mixture, packing it tightly but leaving a small space at the top.

Step 5

Place the stuffed cherry peppers upright in a baking dish. Drizzle olive oil evenly over the top of the peppers.

Step 6

Bake in the preheated oven for 20 minutes, or until the peppers are tender and the stuffing is golden and bubbly.

Step 7

Remove from the oven and let cool slightly before serving. These can be enjoyed warm or at room temperature.
