Ingredients

  • 5 whole Roma tomatoes
  • 1 medium White onion
  • 3 whole Garlic cloves
  • 2 whole Jalapeño peppers
  • 2 whole Dried guajillo chiles
  • 1 tablespoon Vegetable oil
  • 2 tablespoons Fresh cilantro leaves
  • 1 whole Lime
  • 1 teaspoon Salt
  • 0.25 cup Water

Directions

Step 1

Preheat a cast-iron skillet or griddle over medium-high heat.

Step 2

Place the Roma tomatoes, white onion (cut in half), garlic cloves (unpeeled), and jalapeño peppers on the skillet. Roast for 8-10 minutes, turning occasionally, until the vegetables develop charred spots and soften.

Step 3

While the vegetables roast, remove the stems from the dried guajillo chiles and shake out the seeds. Toast the chiles lightly in the skillet for about 30 seconds on each side until fragrant, being careful not to burn them.

Transfer the toasted chiles to a small bowl and cover them with hot water. Let them soak for 5 minutes until softened.
