Ingredients

  • 1 whole (medium-sized) pineapple
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 whole (diced) red bell pepper
  • 1 small (thinly sliced) red onion
  • 2 cups spinach leaves
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 cups toasted pecans

Directions

Step 1

Peel and core the pineapple, then slice it into thick rings or chunks.

Step 2

In a large skillet over medium heat, melt the butter. Add the brown sugar and stir until a syrup forms, about 1 minute.

Step 3

Place the pineapple slices in the skillet and cook for 3-4 minutes on each side until golden and caramelized. Remove from the skillet and set aside.

Step 4

In the same skillet, add a tablespoon of olive oil. Sauté the diced red bell pepper and sliced red onion for 5-7 minutes until softened.

Step 5

Add the spinach leaves to the skillet and season with salt and black pepper. Toss briefly until the spinach wilts, about 1-2 minutes.

Step 6

Arrange the caramelized pineapple slices on a serving platter. Top with the sautéed vegetables and spinach mixture.

Step 7

Sprinkle with toasted pecans for added crunch and serve immediately while warm.
